Originating from Asia, oranges are the most popular citrus fruit and one of the most cultivated fruits in the world. Japanese use the peel of small citrus fruits they call yuzu, while the Chinese prefer dried orange or mandarin peels, and in the Middle East, dried limes are more common. In the West, chefs use citrus juices, while they grate or candy the peel. In the Caribbean and Mexico, it would be unthinkable to cook without limes.
TASTE Orange peels have a distinct orange scent, and the taste ranges from sour to bitter, depending on the type.

BUYING AND STORING Dried bitter orange peel and all kinds of dried lemons and limes are often found in Middle Eastern and Iranian markets. Fresh oranges are best bought at markets or from growers. Candied or dried citrus peels can be stored for years in a well-sealed container.
USE IN COOKING Oranges are mainly used for their juice and peel, which are full of aromatic flavor. They can be used to make juice, marmalade, and as decoration for dishes and pastries. They are an excellent addition to bitter chocolate, jasmine, and chicken and pair wonderfully with fennel.
In some parts of Iran, bitter oranges are popular, and their peel and juice are added to stews and goulashes. This flavor especially complements duck, chicken, and rabbit.
Caribbean and South American marinades (mojos) are made from lime, lemon, and grapefruit juice or bitter orange juice, to which garlic, spices, fruit, and fresh herbs are added. They are used as marinades, dips, salad dressings, or as refreshing sauces with vegetables, fish, grilled, and roasted meat.
In addition to the above, citrus powder can be used as a complement to spice blends, especially mixed with pepper, it pairs well with fish and seafood. To transfer the aroma, mix it with sugar. It is often used as a flavor in various sweet glazes, cakes, cookies, and pies, or simply added to yogurt. Beekeepers sometimes add it to honey for flavor. It can be rubbed on meat as a rub and used in various marinades and dressings.
