Rubus idaeus
Raspberry, or red raspberry, is the common name for the plant Rubus idaeus from the rose family (Rosaceae). The term also applies to the edible fruit of this plant, which is tart, sweet, and red in color. Botanically speaking, the raspberry is not a berry at all but an aggregate fruit of numerous drupelets around a central core.
Raspberry is a deciduous shrub that grows upright and reaches a height of two meters. The leaves are arranged in groups of three or five, with the lower side often silvery-white in color. White flowers bloom in late spring or early summer, and the fruit, which is red and round, ripens from midsummer to mid-autumn.
Raspberry naturally thrives on the edges of forests where there is high humidity and is widespread throughout Europe and northern Asia.
Raspberry is a popular fruit that many consider to have the most intense berry flavor. It has a high concentration of tannins and a significant amount of iron, potassium, magnesium, calcium, and vitamins A and C, as well as flavonoids, fruit sugar, and water. Raspberries contain significant amounts of polyphenols, plant compounds that have strong antioxidant activity. Raspberries are also rich in fiber.
Dried raspberries have different culinary uses compared to fresh fruit. Try chopping raspberries and using them to sprinkle on chocolate treats or even sprinkle them on cereals and breakfast porridges. Dried raspberries also beautifully decorate sweet and savory dishes - bright colors and tart flavors are an excellent addition to sweet and savory dishes. Crumble the berries and sprinkle them over ice cream just before serving.
