INGREDIENTS: black peppercorn, coriander, ginger, cumin, fennel, nutmeg, galangal, star anise, cloves, cardamom, bay leaf, lavender, black caraway, hawthorn berries, paradise grain, cinnamon
ALLERGENS: nuts, celery and celery products, mustard and mustard products.
Ras el Hanout is a Moroccan blend of around 20 or more spices, and literally translated, it means "top of the shop." Many versions of this blend include aphrodisiacs.
A classic blend may contain allspice, black and green cardamom, cassia cinnamon, chufa nuts, Ceylon cinnamon, cloves, cubeb, galangal, malagueta pepper, lavender, mace, nigella, nutmeg, black peppercorn, long pepper, rosebuds, turmeric, and sometimes aphrodisiacs like Spanish fly. Blends intended for export are less exotic.
In Tunisia, Ras el Hanout is a simple blend of rosebuds, black pepper, cubeb, cloves, and Ceylon cinnamon.
Ras el Hanout is usually sold as a blend of whole spices, which can be added to dishes using a spice grinder or ground in a mortar and pestle, but it can also be found in powder form.
