Psyllium, or Indian plantain
A plant native to India and Pakistan. It belongs to the botanical family known as Plantago, which encompasses over 200 small species. The seeds of the psyllium plant are simply dried and ground to separate the husks, which are used as a dietary supplement, while the inner seeds are typically used for animal feed.
Psyllium husks are rich in fiber and have a high swelling capacity, so it's important to consume them with plenty of fluids. Psyllium has a neutral taste, and you can use it to enhance mueslis, dressings, and smoothies.
Moreover, psyllium husk powder has become a staple ingredient in many gluten-free, low-carb, and keto recipes. Because of its ability to thicken liquids, psyllium substitutes for the binding properties of gluten and mimics the texture of baked products made from whole wheat.
