Originating from Asia, oranges are the most popular citrus fruit and one of the most cultivated fruits in the world.
Japanese use the peel of small citrus they call yuzu; Chinese prefer dried orange or tangerine peels; in the Middle East, dried limes are more common. In the West, chefs use citrus juices, while they zest or candy the peel. In the Caribbean and Mexico, cooking without limes would be unthinkable.

BUYING AND STORAGE
In Middle Eastern and Iranian markets, dried bitter orange peel, all sorts of dried lemons and limes are often found.
In a well-sealed container, candied or dried citrus peels can be stored for years.
USAGE IN CULINARY
Oranges are primarily used for their juice and peel, both full of aromatic flavor. They can be juiced, turned into marmalade, and used as decorations for dishes and desserts. They pair excellently with dark chocolate, jasmine, and poultry and go wonderfully with fennel.
In some parts of Iran, bitter oranges are popular, and their peel and juice are added to stews and stews. This flavor particularly complements duck, chicken, and rabbit.
Caribbean and South American marinades (mojos) are made from lime, lemon, and grapefruit juice or bitter orange juice, combined with garlic, spices, fruit, and fresh herbs. They are used as marinades, dips, salad dressings, or refreshing sauces for vegetables, fish, grilled, and roasted meats.
In addition to the above, citrus powder can be used as a supplement in spice blends, mixed with pepper, it goes especially well with fish and seafood. To transfer the flavor, mix it with sugar. It's often used as an aroma in various sweet glazes, cakes, cookies, and pies, or simply added to yogurt. Beekeepers sometimes add it to honey for flavor. It can be rubbed onto meat as a rub and used in various marinades and dressings.
