Agar agar is a completely natural, red seaweed extract that converts liquids to a solid state. It is similar to gelatin, but agar agar creates a completely different texture.
This natural and harmless product has its own E number – E406.
USE IN COOKING
As a vegan substitute for gelatin and in some Asian desserts.
IT IS USED in two varieties - in powder and in threads that look like parts of a transparent plastic bag. Both variants give the same result, but it is easier to work with powder.
PREPARATION
The ratio in which powdered agar agar is used is one teaspoon - tsp per 320 ml of water, or a little less agar agar if you want to gel thicker foods such as pureed fruit.
Always add agar agar to cold water, and then heat it up, otherwise it will curdle. Boil the water until the agar agar is completely dissolved, about 5 minutes.
