Harissa is a spicy blend based on chili peppers and is quite spicy. It is widely used in Moroccan, Algerian, and Tunisian cuisine.
It is served as a condiment in which pieces of grilled meat are dipped, added to soups and stews, or served as a seasoning with couscous. However, it's common to find it alongside salt and pepper on the table.
Harissa is sometimes added to fresh tomato puree and served as a dip for finger food. If mixed into plain yogurt, it becomes an excellent marinade for pork and chicken.
To make harissa paste, simply add olive oil or another oil and optionally lemon juice to the spice blend. This prepared harissa can be an excellent rub for pork, chicken, lamb, or mutton.
Recipes for harissa vary depending on the region and household. Variations may include cumin, red pepper, garlic, coriander, and lemon juice. In the Saharan region, harissa may have a smoky flavor.
Tunisia is the largest exporter of ready-made harissa, which can be in powder form or already mixed with liquids in jars, cans, or tubes.
