Five spice is a blend of five spices primarily used in Chinese, i.e., East Asian cuisine.
The quantities of individual spices are based on the Chinese philosophy of balancing yin and yang.
There are many variations of this blend, but the most common one consists of star anise, cloves, cinnamon, Sichuan peppercorn, and fennel in equal proportions. Chinese or cassia cinnamon can be used instead of true cinnamon.
Five spice can be used with fatty meats such as pork and duck. It is used for stir-fried vegetables and as a rub for chicken, duck, pork, and seafood.
Although the exact origin of this blend has been lost to history, it is speculated that the Chinese created it in an attempt to make a miraculous powder that would combine all five elements. All five tastes (sour, bitter, sweet, spicy, and salty) can be found in this blend. However, it is also possible that chefs accidentally mixed these spices and realized it could liven up even the most boring dish.
Regardless, there is no doubt that five spice is a unique spice blend.
Stored in a well-sealed container, five spice will retain its flavors and aroma for at least a year.
